After much research and watching Forks Over Knives, my husband and I decided to incorporate vegan meals into our diet. I am doing mostly vegan (or at least vegetarian when there isn't a vegan option) and my husband is just doing some vegan meals because he loves meat a little too much ;)
I have been really impressed with the recipes I've tried thus far! They have a ton of flavor which I love! I made sweet potato tacos (obsessed), vegan bread, sweet potatoes stuffed with vegan "mac and cheese," and lentil stuffed portobello mushrooms. I have loved all of these recipes and I would most certainly make them again!
